These little meatloaf bites are the reason my husband hovers around the oven like a kid waiting for cookies. They’re juicy, savory, perfectly portioned, and ridiculously easy to make. I usually save them for holidays because they disappear FAST — but yesterday I made a half batch “just because,” and now he’s begging for them weekly 😂
Here’s the full recipe so you can make your own:
Ingredients (makes 12–15 bites):
• 500 g (1 lb) ground beef
• 1 small onion, finely diced
• 1 small green pepper, diced (optional but amazing)
• 1 egg
• 1/2 cup breadcrumbs
• 1/4 cup milk
• 2 tbsp ketchup
• 1 tbsp Worcestershire sauce
• 1 tsp garlic powder
• 1 tsp smoked paprika
• Salt + pepper to taste
• Optional: shredded cheese to stuff inside
For the glaze:
• 1/4 cup ketchup
• 2 tbsp brown sugar
• 1 tsp mustard
Instructions:
- Preheat your oven to 190°C / 375°F. Grease a muffin tin lightly.
- In a large bowl, mix all meatloaf ingredients until just combined. Don’t over-mix — it keeps them tender.
- Scoop the mixture into each muffin cup. Press lightly to shape.
- Spoon a little glaze on top of each bite.
- Bake for 20–25 minutes, or until cooked through and slightly caramelized on top.
- Let them rest for 5 minutes before removing — they hold together better.
