These little meatloaf bites are the reason my husband hovers around the oven like a kid waiting for cookies. They\u2019re juicy, savory, perfectly portioned, and ridiculously easy to make. I usually save them for holidays because they disappear FAST \u2014 but yesterday I made a half batch \u201cjust because,\u201d and now he\u2019s begging for them weekly \ud83d\ude02<\/p>\n\n\n\n

Here\u2019s the full recipe so you can make your own:<\/p>\n\n\n\n

Ingredients (makes 12\u201315 bites):<\/strong>
\u2022 500 g (1 lb) ground beef
\u2022 1 small onion, finely diced
\u2022 1 small green pepper, diced (optional but amazing)
\u2022 1 egg
\u2022 1\/2 cup breadcrumbs
\u2022 1\/4 cup milk
\u2022 2 tbsp ketchup
\u2022 1 tbsp Worcestershire sauce
\u2022 1 tsp garlic powder
\u2022 1 tsp smoked paprika
\u2022 Salt + pepper to taste
\u2022 Optional: shredded cheese to stuff inside<\/p>\n\n\n\n

For the glaze:<\/strong>
\u2022 1\/4 cup ketchup
\u2022 2 tbsp brown sugar
\u2022 1 tsp mustard<\/p>\n\n\n\n

Instructions:<\/strong><\/p>\n\n\n\n

  1. Preheat your oven to 190\u00b0C \/ 375\u00b0F<\/strong>. Grease a muffin tin lightly.<\/li>\n\n\n\n
  2. In a large bowl, mix all meatloaf ingredients<\/strong> until just combined. Don\u2019t over-mix \u2014 it keeps them tender.<\/li>\n\n\n\n
  3. Scoop the mixture into each muffin cup. Press lightly to shape.<\/li>\n\n\n\n
  4. Spoon a little glaze on top of each bite.<\/li>\n\n\n\n
  5. Bake for 20\u201325 minutes<\/strong>, or until cooked through and slightly caramelized on top.<\/li>\n\n\n\n
  6. Let them rest for 5 minutes before removing \u2014 they hold together better.<\/li>\n<\/ol>\n\n\n\n
